My heart is bursting at the seams with gratitude for all the blessings I have in my life, specially my husband, my daughters, my family. I know I am very fortunate and I will never, ever take it for granted.

Este jueves se celebra Acción de Gracias aqui en los Estado Unidos. Este año, como todos los años siento el corazón a punto de estallar de la gratitud por todas las bendiciones que tengo en mi vida, especialmente por mi esposo, mis hijitas, mi familia. Se que soy muy afortunada y nunca lo tomaré por sentado.
A los que los celebran les deseo un día lleno de amor, familia, amigos, risas y buena comida. A los que no lo celebran les de deseo un espléndido jueves :)

Everyday Mother: Baking Together


As I have mentioned before, I absolutely love baking and I could not wait to share that love with my daughters. Ever since my oldest, Sofia, could stand on a step stool, she has been helping me bake. She even made herself a chef hat out of purple construction paper and by the time she was in kindergarten she proclaimed that she was going to grow up to be a pastry chef (♥). I did not know if Miranda would be interested in baking at all but not too long ago she heard me turn on the mixer and she immediately said: "Cake!!!" and she went and got the step stool all by herself and got close to me to see what I was doing. She helped me make the cake and she did so well, it was so sweet. I then knew that it was finally time to take these pictures, which I have wanted to do since I started the "Every Day Mother" series. It was SO messy, there were laughs, a bit of pouting, some screaming to take control of the mixer and the camera remote fell in the batter (!!!) but man, having my two girlies help me bake was as wonderful and sweet as I imagined:

Como he comentado antes, me encanta la repostería y soñaba con el día en el que mis hijitas me ayudaran en la cocina. Sofia ha sido mi asistente de repostería desde que estaba lo suficientemente grande como para pararse en el baquito y sostener la batidora. Un día hasta se hizo un sombrero de chef con cartulina morada y para cuando estaba en el kinder proclamó que sería chef de repostería cuando creciera (♥). No tenía idea si Miranda iba a tener algún interés en ayudarme a hacer mis tortas/pasteles igual que su hermana, pero hace unas semanas apenas escuchó que prendí la batidora gritó: Pastel!!!y fué y agarró el banquito y se paró cerquita de mi para ayudarme y lo hizo tan bien!(♥). Ese día supe que ya podía tomar estas fotos, cosa que he querido hacer desde que empecé la serie "Every Day Mother". Hicimos un desastre nacional en la cocina, hubo risas, pucheros, gritos por querer tomar control de la batidora y el control remoto de la cámara se me cayó en la mezcla (!!!) pero como nos divertimos. Tener a mis dos chiquitas de asistentes fue tan lindo como me lo imaginé:

And there lays the secret to good baking, do you see it? (the secret it's an illegal amount of butter, but don't tell anyone lol)/ y alli esta el secreto de la reposteria, lo ven? (el secreto es una cantidad ilegal de mantequilla pero no le digan a nadie jajajaja)

We made pumpkin bread that day but I'll also share the recipe for banana bread which is one that I make ALL the time with Sofia/ Esto fué lo que hicimos ese día, pero también les dejo la receta de pan de cambur/plátano/banana que es la que SIEMPRE hago con Sofia.

Recipes:

PUMPKIN BREAD

Ingredients:
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
2 cups brown sugar
3 1/2 cups all-purpose flour
1 teaspoon vanilla
2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1/4 teaspoon ground ginger
1 teaspoon all spice

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

BANANA BREAD

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter

1 cup brown sugar
2 eggs, beaten
3-4 mashed overripe bananas
1 tsp vanilla
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground all spice


Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

NOTE1: To make it healthier I usually replace one of the cups of flour for 100% whole wheat flour and add 1/4 cup of ground flaxeed. It's just as delicious in my opinion.

NOTE2: Since these breads are so moist it is best to keep them in the refrigerator. Let it come to room temperature before you eat it or toast slices in the toaster, delish!

And at the end we had delicious pumpkin bread, these great memories and an unharmed camera remote. Win!! :)

Pan de Auyama/Calabaza

1 (15 onzas) lata de calabaza (esto yo creo que solo se consigue en USA, sustituir por 2 tazas de calabaza/auyama cocida sin sal)
4 huevos
1 taza de aceite vegetal (no de oliva)
2/3 taza de agua
2 tazas de azucar morena
3 1/2 tazas de harina de trigo de todo uso
1 cucharadita de vainilla
2 cucharaditas de bicarbonato de soda
1 1/2 cucharaditas de sal
2 cucharaditas de canela molida
1 cucharadita de nuez moscada
1 cucharadita de clavos de olor molidos
1/4 cucharadita de gengibre molido
1 cucharadita de pimienta guayabita/pimienta de jamaica/pimienta dulce molida

1. Caliente el horno a 350 F/ 175 C. Enharinar y engrasar dos moldes de pan de 9X5.
2. En un recipiente grande mezclar bien la calabaza, huevos, aceite, agua y azucar. En un recipiente separado mezcle la harina, el bicarbonato de soda, sal, canela, nuez moscada, clavos de olor, gengibre y pimienta. Agregue los ingredientes secos a la mezcla de calabaza hasta que quede todo unido (pero no mezcles de más).
3. Verter la mezcla en los moldes y llevarlos al horno por 50 minutos aprox. hasta que el probador salga limpio. Dejar enfriar y sacar del molde.

Pan de Cambur/Banana/Plátano

Ingredientes:

2 tazas de harina de trigo de todo uso
1 cucharadita de bicarbonato de soda
1/4 cucharaditas de sal
1/2 taza de mantequilla
1 taza de azucar morena
2 huevos batidos ligeramente
3-4 cambures/bananas/platanos bien maduros, pisados con un tenedor
1 cucharadita de vainilla
1 cucharadita de canela molida
1/2 cucharadita de nuez moscada
1/2 cucharadita de clavos de olor molidos
1/2 cucharadita de pimienta guayabita/pimienta de jamaica/pimienta dulce molida

1. Caliente el horno a 350 F/ 175 C. Enharinar y engrasar un (1) molde de pan de 9X5.
2. En un recipiente grande mezclar la harina, el bicarbonato de soda, sal, canela, nuez moscada, clavos de olor, gengibre y pimienta.
3. En otro recipiente grande colocar la mantequilla y batirla con el azúcar hasta obtener una mezcla cremosa Agregue los huevos, las bananas/cambur/plátano y la vainilla hasta que quede bien mezclado. Agregue la mezcla de banana a la mezcla de harina hasta que quede todo unido (pero no mezcles de más).
3. Verter la mezcla en el molde y hornear por 60 minutos aprox. hasta que el probador salga limpio. Dejar enfriar por 10 minutos y sacar del molde.

NOTA1: Para hacer este pan un poco más saludable yo usualmente substituyo la harina por harina de trigo 100% integral y le agrego 1/4 taza de linaza molida. Sabe igual de rico en mi opinión.

NOTA2: Como estos panes son tan húmedos es mejor que los mantengas en la nevera. Espera a que se pongan a temperatura ambiente antes de comerlos o puedes tostar rodajas en la tostadora.

Y al final tuvimos un rico pan de calabaza, estos lindos recuerdos y el control remoto sobrevivió!! :)

At the Carnival

When I was little, there was a small amusement park not far from my house. My dad used to take me when we had our weekend dates and my mom would take me whenever she could. I also used to go with my aunt and uncle and my cousins quite often, so needlessly to say I have fond memories of the place. Naturally, carnival rides have a special place in my heart and a retro appeal I can't resist. A few weeks ago I saw a carnival pop up in the parking lot of a mall I pass by every day on my drive to work. Every single morning for a entire week I looked at it as I sat in traffic and marveled at how beautiful the rides looked in the early morning light and I lamented the fact that I did not have my camera with me to capture some of that magic. Finally one morning I just could not resist it anymore and I stopped and I took a few quick pictures with my iPhone and posted them to Intagram (my latest addiction) and I absolutely loved them. That day I decided I just had to bring my camera and that is exactly what I did a few days later. I was a bit nervous I might get in trouble (cough trespassing cough) and I was a tiny bit late to work (ahem) but oh it was worth it. I love these images. They take me back to my childhood and that is a great thing :)

Cuando yo estaba pequeña había un parque de diversiones/atracciones no muy lejos de mi casa. Mi papá siempre me llevaba cuando le tocaba su fin de semana conmigo y mi mamá me llevaba cada vez que podía. También iba con mis tios y primos seguidamente asi que como se imaginaran, tengo recuerdos lindos de el lugar. Naturalmente, todas estas atracciones tienen un lugar especial en mi corazón y nunca he podido resistir ese look retro que tienen. Hace unas semanas vi un parque de esos ambulantes montado en el estacionamiento de un centro comercial por el que paso todos los días. Todas las mañanas por una semana entera lo veía mientras estaba parada en el tráfico y me quedaba maravillada de lo lindo que se veía en la luz de la mañana y lamentaba que no tenía mi cámara para capturar un poco de esa magia. Finalmente una de esas mañanas ya no pude resistirlo más y me paré a tomar un par de fotos con mi iPhone y las monté en Instagram (mi nueva addición) y me encantaron. Ese día decidí que tenía que traer mi cámara y asi lo hice un par de días después. Estaba un poquito nerviosa que me iba a meter en problemas (el parque no estaba abierto a esa hora obviamente jeje) y llegué un poquito tarde a el trabajo (no le digan a mi jefe) pero creo que valió la pena. Me gustan mucho estas fotos. Me llevan a mi niñez y eso es algo muy bueno :)

Riding into November

Hello! What a crazy busy couple of weeks! Can you believe it's November already? Time is flying by. Things are starting to settle down, fortunately, so I will have more time for blogging and shooting (yay!). I have some stories and recipes coming up, but today I'll leave you with some images that I shared on a great Flickr group called La Vuelta al Mundo. Hola! Que semanas más ocupadas he tenido! Pueden creer que ya es Noviembre? Yo no! Octubre se fué desiado rápido. Afortunadamente las cosas se estan calmando un poco, asi que tendré más tiempo para bloguear y para tomar fotos. Tengo unos cuentos y recetas que compartir pero por hoy les dejo las imágenes con las que participé este mes en el grupo de Flickr La Vuelta al Mundo. El tema de el mes de octubre fué bicicletas:
